Zucchini Bread: A Simple and Healthy Holiday Bread Recipe that Will Make You Feel the Holiday spirit all season long!

There's nothing better than the taste of fresh-baked zucchini bread. With these tasty, healthy ingredients you can make your own delicious loaf to take with you to a holiday party, to eat for breakfast, or give as gifts for friends who love healthy, tasty treats too.

What You Need for Zucchini Bread

  • 250 g (9 oz) of zucchini, grated
  • 3/4 cup coconut sugar
  • 1/2 cup olive oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

What You Need to do

1. Preheat the oven to 350 degrees F. Line a loaf pan with baking paper.

2. Grate the zucchini using the large holes of the grater, then set aside.

3. In a large bowl combine the sugar, oil, eggs, and vanilla extract. Beat vigorously with a whisk until creamy. Now stir in the grated zucchini.

4. In a medium bowl stir together the flour, baking powder, cinnamon, salt, and baking soda. Add this dry mixture to the zucchini and stir until combined. Transfer the batter into a prepared loaf pan.

5. Place the loaf pan in the oven and bake it for 35 to 40 minutes until the bread is firm and a toothpick inserted in the middle comes out clean.

6. Set the pan aside to cool for 10 minutes then remove the loaf from the pan onto a wire cooling rack. Cool completely before slicing and serving.
